Module 1: Food Biochemistry and Food Microbiology printed in the syllabus as Module Detailed Content

  • Food Constituents: Carbohydrates, Proteins, Enzymes, Vitamins, Lipids and Minerals, Flavors, Nutritional & sensory characteristics, Food fortification.: Types and Importance, Water activity, role of microorganisms, D & Z values, TDT curve, Indian laws regulating Foods and Food processing. Numerical on D & Z value Self-Learning: Emerging Preservation technologies.

Module 2: Size reduction of solid, liquid foods printed in the syllabus as Module Detailed Content

  • Size reduction in solid and liquid foods, Mixing and Forming, Mechanical Operation and expressions (Mechanical operations), Size reduction effects on food. Numerical on Mixing Index, Size reduction. Self-Learning: Extrusion technology in food processing used in noodles, snacks, breakfast cereals

Module 3: Thermal Processing printed in the syllabus as Module Detailed Content

  • Blanching, extrusion, pasteurization, Heat Sterilization, In container Ultra high Temperature (UHT)/aseptic processes. Self-Learning: Food dehydration technology

Module 4: Freezing and Refrigeration printed in the syllabus as Module Detailed Content

  • Effects of low temperature on quality, chilling, freezing, freeze drying and freeze concentration. Self-Learning: Cold storage engineering: Shelf-life improvement techniques in fruits and vegetables

  • Manufacturing and processing of food products: Fruit juice processing, Alcoholic beverages, Milk and Milk Products; Milk powder, cheese, Ice cream, Tea coffee, cocoa, Bread, Biscuits, confectionary (hard boiled sweets & chocolates) Self-Learning: Automation in food processing industries like Sensors, PLC (Programmable Logic Controllers) systems in food processing industry.
